As the Arctic Club Hotel Seattle nears its 2008 grand opening, stylish accommodations and historic charm won’t be the only attractions. Juno, its full-service restaurant at the street level of 3rd and Cherry, will also open to offer regional North American cuisine beginning in spring 2008. Led by executive chef and general manager Thomas Kollasch, a veteran Seattle chef, the Juno menu “chases the seasons” and integrates fresh ingredients and culinary finds sourced from specialized purveyors from all over the country. Kollasch utilizes these longstanding personal relationships to create an inspired and original menu. “We designed the menu to be approachable and comfortable, and we structured it to appeal to foodies and those with more straightforward tastes,” Kollasch said. “By late spring we’ll also introduce daily three- and five-course chef’s tasting menus to round out the dining options.” Juno will promote and utilize specialized organic, eco-friendly farms, bakeries, sustainable fisheries and vendors that raise and harvest their products in the best interest of the land and sea. Though the menu will continue to evolve and will be updated frequently to suit guests’ tastes, Juno will consistently offer a broad range of simple, approachable food done well. Attentive, knowledgeable and sincere service from career service staff will enhance the guest experience. Whether it’s a classic for breakfast (eggs Benedict, Belgian waffle, omelettes) or the house specialty such as the Amaretto Biscuits & Gravy (Juno’s signature mile-high, amaretto-infused buttermilk biscuit with Isernio’s Chorizo Gravy and roasted potatoes), the options abound. Lunch service is packed with a generous menu, from creative salads and sandwiches to a New England Lobster “Pot Pie” and Roasted Persimmon and Mint Risotto. The Kobe beef and bleu cheese endowed Cherry Street Burger pays homage to Juno’s downtown location. Dinner brings small plates such as ribs and sliders, and full entrees such as Espresso & Coriander Crusted Filet Mignon, red wine braised Rabbit Saupiquet, and Ellensburg Rack of Lamb with garlic, rosemary, jerk roasted sweet potato, and roasted beets. The 134-seat restaurant and bar, designed by Seattle’s Mesher Shing and Associates, features an open kitchen, a fireplace in the dining room and furnishings of dark woods and contemporary fabrics. Northwest art and marble floors with glass tile accents add rich detail while plush banquettes and booth seating add a comfortable appeal. The buzz of downtown can be observed from the dining room through street-front windows. A dedicated private dining area accommodates receptions of up to 28 guests (24 seated). Juno’s dedicated, full bar seats 50 people and will offer a handful of seasonal small plate selections as well as dinner items upon request. Late night dining, daily happy hour, Wi-Fi access and two Plasma HD televisions are also part of the planned bar features. -more- Breakfast, lunch and dinner will be served daily. The menu will be tiered with classic, innovative, and local selections at each meal period. Vegetarian offerings will be a main feature, and healthy fare will be emphasized during the lunch period. Guests may order from an extensive wine list or bring their own wines (corkage fee applies). Parking is available through the valet of the Arctic Club Hotel Seattle at 306 Cherry Street, or at many nearby public lots.
